Probably beginning around the mid nineteenth century when coffee became very popular, they were not roasted nearly as darkly as they are today. Why? - Darker roasted coffees have less caffeine than lighter roasts and the delivery of that drug was, and still is, the primary reason the agricultural based economy consumed coffee.
- Coffees were bought as an unroasted dry good initially...people were not inclined to "burn" their food.
- As coffee roasts longer, it loses mass. Therefore, lighter roasts could be stretched farther.
